This seems to work for me as a workaround:

I am having the cache problem, and couldn't get it fixed by making $.ajax cache to false. I am using DataTables with Symfony 1.4 and JEditable.

1) see http://www.datatables.net/ref#bSortable - set bSortable: false for any column using aoColumns or aoColumnDefs

ajax souce doesn't use a database query or the aoData parameters. you would need to use bServerSide for that which requires a lot more support on the server side script.
