How can I format the date with which the searchbuilder's datetime searches?

In my date column I have this format: DD/MM/YYYY and the datetime searches with YYYY-MM-DD so I need it to search in the specific format but I still don't know how to do it... I was trying with DataTable.datetime("DD/MM/YYYY"); but no change appears. Also, how can I change the language of the datatime, so that the months are in Spanish (I am using the Google applications script)
