We are creating a library of node api's and would like to use DataTables and Editor as the front end. Will it work? Any examples available for CRUD?

Yes, Editor should work with any server-side environment, however only PHP and .NET libraries are provided for the software at this time. The client / server protocol that Editor uses is documented though if you wanted to implement your own server-side code (in node or anything else).
