Server Side Query Results with ’ (apostrophe/backtick) Breaks table

When using DataTables with server side/ajax, the table gets stuck 'Processing..' if any of the results contain a ’ character. Not sure if it is saved as a backtick or apostrophe. I am using a wordpress database if this helps. Has anyone run into this that can offer help?

Run into it all the time. There's other characters that will do the same. I escape them and send the data back in json format.
