Which tags are currently supported to export data?

I'm working with a really old dynamic generated table. I'm planning on using DataTables plugin just to export the data to excel (initially). The code that generates the table is really old and there's a lot of cleanup to do and that's where the question comes:

Is there any documentation on which HTML elements in the table structure are supported?
How should the structure of the table be in order for DataTables to instantiate properly and work properly with the data?
