SharePoint People Picker Field not showing up in DataTable

I was able to get DataTables to work using the solution here but my list contains a People picker field and the data is coming back as [Object Object]. Newbie so not sure what to do. Thanks in advance for help.

Hi Colin:
Unfortunately, I'm working on an internal environment from which I can't easily export the code. I don't have access to an external SharePoint environment in order to create a test site.
