My datatable keeps growing and growing and growing everytime I use any of the buttons/functions. Please see the video below:

Are you using the latest 1.9.1.dev nightly? Can you link me to a page showing the issue? Do you have a wrapper around the table which has width:100% or similar on it?

I just switched to 1.9.1 dev nightly as a test - and yeah - same problem. I can't show you the page because it's part of a proprietary app for my job. Here's the html/css:
