I have an old web UI that I inherited from a previous employee who has left the company a long time ago. It uses jquery-ui 1.8.20 and minified JS version 1.7.2, TableTools_JUI and TableTools.js version 1.9.1. My question is, is it straightforward to get these components updated to the latest versions? If not, is there documentation anywhere that discusses an upgrade path which includes but isn't limited to making fine tuning adjustments for any breaking changes since the old versions?

TableTools is no more, it was retired a while back, so that's going to be your biggest hurdle. Buttons offers similar functionality, so you could look at that, but it is going to require some code changes,
