Server side pagination

I saw your one exampe where you did Server-side processing. is it server side pagination ? If yes. then how do you assume that this request contain how much record ? because in your example you are displaying the page number in advance once i reach at the end the next button got disable. why ? i did't get it. what happen if it has more record. how can we predict page number ?
