My DataTable reads "25 records found" when the maximum amount (25) is returned and I want to change the text to "25 records found, refine your search to reduce number found". I think there is probably an over ride for this but haven't found it yet. Help?

I think you're referring to Showing _START_ to _END_ of _TOTAL_ entries message in the info panel.

Use language.infoPostFix to define string to append to all other summary information strings.

For example:
