Append text on top in a select list

In Datatables select lists the first row on the top is empty. Is it possible to put here a text for indicating to the user what is to be done? E.g. 'Select an option'.

You could do this, but it looks odd when you want to select it again to clear the list.

Yes, this is what I wanted to do. The fact that it seems a bit odd when clearing the list is the inevitable downside of it.
