When using serverSide processing it is important to use this option to maintain consistent conditions across different pages of the table and also to reduce the number of requests to the server.

How does that option work exactly to reduce the number of requests to the server?

Frankly - I'm not sure! I suspect things have moved on since that doc was originally written. I'll look into updating it.
