How to disable 3rd click for column sorting?

Hi,

I noticed the 3rd click removes sorting and reverts to a non sorted state which is great. However I don't need this feature, so how can I disable it and limit sorting only to 2 clicks?

PS: I use ajax and server side processing, so my sorting is done by the backend.

See this thread which discusses the option needed to remove that third state, setting it either per column, for all columns or by default.
