Is it possible to use scroller on a table with inputs?
If so, how should the input be represented in the json data?

As in input elements inside the table cells? Sure it's possible, just like in any other DataTable. Just put your input HTML into the JSON for each cell. You may need to use a technique like this to submit the form: http://datatables.net/release-datatables/examples/api/form.html
